What's-in-the-fridge vegetarian dumplings

This recipe is a vegetarian version of Chinese dumplings. I use round dumpling wrappers, available from Chinese markets or the natural foods section of supermarkets, and a small plastic dumpling press, purchased at a Chinese market, to make the dumplings. The filling can vary, with any combination of fresh or frozen quick-cooking vegetables used as filling. I like to use cream cheese to bind the filling together but a vegan version of this recipe could leave this out.

ingredients
Dumpling wrappers
Light cream cheese
Spinach (fresh)
Ginger (fresh)
Peas (frozen)
Apples

preparation
Dice the ginger, spinach and apples. Mix ginger, spinach, apples, peas and cream cheese in a bowl. Put a small spoonful of the mixture in the center of the dumpling wrapper. Fold and seal. Put in a pot of boiling water and boil for 3-4 minutes.
